How do I control my computer's fan speeds, including the case fans, and the CPU pump and fan speed?

Moving from Windows on an Acer laptop, I am used to Acer's PredatorSense application which lets me set a standard, full or custom speed for the CPU and GPU fans, as well as enabling a mode that that boosts the fans at lower temperatures.

In my current build, I can enter the UEFI and set even more options. I can set the individual speed for each fan header on the motherboard, as well as the pump speed. I can also set them to auto (default), and specify a temperature-to-speed graph, such that when the temperature hits a specific number, the fan speed is adjusted automatically.

How do I control these things from the desktop, such that I don't have to enter the UEFI for them?
