What is Kmail running in the background?

When I run Kmail on i3, and then close it, it appears to continue running some stuff in the background. For example, I periodically get notifications about new mail from dunst, even though I have closed Kmail.

What does Kmail do in the background?

That's likely Akonadi running in the background. It's the backend that KMail uses to store and manipulate mail.
